100% natural waffle recipe with cooked sweet apples

I made today waffles so that I could take photos to post the recipe to all of you.
My machine is quite old so I had a bit of a sticky problem but with a good one it’s quick & easy, the recipe is all natural & the more you practice the faster it gets.

Ingredients
———-

1. 2 1/2 cups 75% organic Spelt flour (or regular) 3 cup if you want it more consistent
2. 1/4 to 1/2 cup extra virgin olive oil (or anything you have at home) less would feel lighter
3. 1/2 cup rice syrup (or sugar if that’s what you use)
4. 1 pinch of salt
5. 1 egg (organic if possible)
6. 1 to 2 tsp. baking powder
7. 1/2 to 3/4 cup Spelt milk (water or regular milk) depending on the amount of flour you’ve chosen

Method

Mix it in a small bowl by hand, spray the machine with oil then turn it on to preheat, pour the batter gently, close the lid & wait till the light goes green then, carefully ease it out & put on a plate.
I used sweet cooked apples to accompany it & poured rice syrup on the waffles but you must be familiar with all the other options out there as icing sugar, ice cream, strawberries & whipped cream… as usual I encourage you to create some of your own ideas it gives it a personal touch.

Boiled in a pan, then cook on a low fire for about 20 mn. serve warm with waffle.

Montecao easy no-electrical appliance-needed recipe

I posted a while back a Monte carlo recipe this time it’s a Montecao which I wanted to share with you as the ingredients are more basic, fewer & easily found in every home.
It is a throw-in-one-bowl recipe & mix by hand… can’t get easier:)
I’ll give you the regular sugar version for those who use it.
And for those who prefer a less oily & crunchier recipe I will include an adaptation I created which became very popular here!

Ingredients

1. 5 cups 80% organic Spelt flour (It’s the healthiest, light & off-white in color but you can use regular flour)
2. 1 cup extra virgin olive oil (there’s no olive taste after cooking or baking)
3. 1 cup rice syrup

Method

1. Put all ingredients in bowl mix then shape
2. Sprinkle cinnamon powder on top
3. Slide in preheated oven on 150 degrees Celsius = 302 degrees Fahrenheit for 12-15 mn.

1. 500 gr. = 88.1 oz. 80% organic Spelt flour
2. 25 cl. Olive oil
3. 200 gr.= 7 oz. Sugar

1. 4 cups 80% organic Spelt flour
2. 1 cup Oatmeal
3. 1/2 cup Olive oil
4. 1/2 cup hot water
5. 1 cup Rice syrup (you can change to sugar)
6. 1 handful of organic raisins
7. 1 tsp. Speculoos spices mix (or cinnamon if you can’t buy it in your area) Wikipedia Specifies “Spices used in speculoos are cinnamon, nutmeg, cloves, ginger, cardamom and white pepper”

If you have followed my blog you know about my all-wholemeal-Spelt-sugar-free cakes. This is a recipe I found in a magazine which I have “translated” to my ingredients (a friends taught me flexibility when following new recipes) my family absolutely loved it and actually preferred it to the too sweet honey cake. It is so easy to do you only have to stir for 2 mn by hand.

Ingredients
———–

1. 3/4 cup Tea (boil half the amount add 1 tea bag,when water’s colored add the other half cold non-boiled)
2. 1. 1/2 cup rice syrup (honey or any natural sweetener)
3. 2 cups wholemeal Spelt flour (or any white flour you have)
4. 1 pinch of salt
5. 3/4 to 1 tbsp baking powder
6. 1 tsp ginger powder (I left it out once & it was fine)
7. 1/2 tsp cinnamon
8. 2 eggs (I put 1 egg once & it was perfect)
9. 1/4 cup of olive oil (nobody feels it but take the oil of your choice)

Put it all in a bowl, stir then pour in baking pan. If you want two cakes as I’ve done just double the recipe.
Bake in oven for 1 hr on 120 degrees Celsius (248 Fahrenheit) then, the last 15 mn on 150 degrees Celsius (302 Fahrenheit)
Enjoy the compliments you’ll get for not much effort 😉

100% Natural easy white or wholemeal Spelt flour doughnut recipe!

This is a very easy recipe for doughnuts which my kids love in the cozy winter weekends.
It is totally natural. The photos are with white Spelt flour but I did it in wholemeal
and they confessed preferring it, which is not an easy thing for them to do 🙂

The recipe is the same one as the chocolate roll I previously posted, so I put it back in
this one.

This recipe is not one of my easiest ( I had to let the dough rise ) but it’s nourishing, it’s a good
unsweetened chocolate roll for recess at school or at work. All in all, I’d say it’s
a recipe worth doing every once in a while.
I use the bread machine on dough program, to mix it and let it rise. It’s quicker, but you can do it
the ” longer “Way the only difference with the machine is, that it requires dried yeast.

Ingredients

1. 325 ml = 10.9 u.s oz Water
2. 3 Eggs, it can be left out for the egg sensitive
3. 800 gm = 1.764 lb Spelt flour ( or any other )
4. 4 tbsp olive or sesame oil ( any other is good too )
5. 4 tbsp rice malt ( honey or any other natural sweetener, or 3 tbsp sugar )
6. 2 tsp salt
7. 2 1/4 tsp dried yeast ( or fresh but then you have to prepare it with a few grain of sugar and luke warm water )

Method

1.Take the risen dough roll it out.

2.Use a cup to cut out the doughnut shape.
3.Use a bottle top to make a whole in the middle
if you desire that shape.
I do some with and some without.
4.Fry it in a little pan with about 6/7 cm = 2.3 or 2.7 inches,
olive oil or any other kind on a small fire.
Do not leave the oil too long on high ( the first one still goes )
even with a small fire as
it will brown too quickly and leave it raw inside.
5.Pour rice syrup on top, honey, unsweetened jam which you can put in by making
a small hole in the fried doughnut without a hole, or any other sweetener on the
doughnut and enjoy it.

For the ones who use sugar you can sprinkle icing sugar on top it makes it look very
decorative.
For the calorie counters, there is a possibility to put it in the oven and
bake. It is not the same taste but it is still delicious!

But mainly use your imagination and do what you fancy doing 🙂
